Springfield Victory Mission - Director of Food Services / Director Victory Trade School - Springfield, Missouri 2001 - Present

Administrator of all food related services for the Springfield Victory Mission. Developed Victory Trade School system, complete with academic structure, curriculum, scholarships, catalog, handbook, and standard operating procedures. Designed and launched Cook’s Kettle Restaurant to serve as the hands-on lab for the school. Through the school we train men in food service skills, life skills and conflict resolution. Students receive a diploma through the NRAEF upon completion of 7 nationally certified courses.
Ozarks Technical Community College, Adjunct Instructor – Springfield, Missouri, 2001 - Present

Business Instructor at the Federal Medical Center for Prisoners.

The Station Café & Pub, Owner and Manager – Springfield, Missouri 2000 - 2001

Created upscale restaurant concept, renovated building space and opened restaurant. Developed varied menu and recipes. Managed all aspects of the business. Payroll and bookkeeping through the use of Quick Books.
Sodexho Marriott Services 1995 - 2000

Director of Catering – Southwest Missouri State University, Springfield, Missouri

Opened new account, developed standards and processes, job descriptions, pull sheets, pick up schedules, change sheets, vehicle schedules, and requisition forms. Use of computerized scheduler and order forms. Safety and sanitation programs, culinary planning, design of catering guide and brochures. Created ‘Area Treatment’ program for district. Computation of key result indicators and forecasting. Corporate sales through campus visits, proposal writing and bid presentation.

Director of Catering – Florida State University, Tallahassee, Florida

Implemented catering standards. Hired, trained, supervised catering staff. Managed conference center food service. Inventory control. Record keeping, training and supervision of staff. Forecasting of sales, food cost and labor.

Lyon College 1985 - 1995

Responsible for planning of presidential events and client contact. Coordinated fund raising efforts with the President and Development office. Public relations.

Responsible for computerized information on all donors. Research on philanthropists and foundations. Grant writing. Monitored endowment, annual fund, and capital accounts. Developed data and submitted reports on various funds.
